Whole30 Frittata

I had never made a fritatta before and I really wanted to try making one so I started looking up recipes and then just ended up throwing one together from bits and pieces of the recipes. Here is what I did…

Whole30 Fritatta
  • 6 eggs
  • 1/3 cup egg whites
  • 1 tbs clarified butter or oil
  • 1 onion diced
  • 1 tomato (half diced and half sliced for topping)
  • 1/2 green pepper diced
  • 1 cup spinach

I sautéed the onion and green pepper in an oven safe skillet until softened. Then I added the diced tomato and spinach and let cook for about another minute. In a separate bowl I had beaten the eggs and egg whites together. Add the mixture to the skillet and mix the ingredients together then place the slices of tomato on top. Let sit without mixing for around 3-4 minutes or until the sides start to become firm. Put the pan under the broiler on high for another 3-4 minutes or until the top is golden brown. Serve with mashed avocado, salsa, hot sauce and chives… it’s delicious this way!

I really love this recipe because you can sub whatever vegetables you like — mushrooms, butternut squash, zucchini, sweet potato, brussels sprouts… the list goes on an on! You can also add sausage or bacon for some added protein. Enjoy!!
