Whole30 Sweet Potato Nachos

Fair warning… these are addicting! Sweet Potato Nachos are one of my favorite things I made on Whole30. Here’s the details…

  • 1 sweet potato
  • 4 oz ground beef/pork/or turkey
  • 1/2 tbs olive oil
  • kale/shredded lettuce
  • tomatoes
  • avocado
  • Whole30 Ranch
  • salsa
  • hot sauce
  • chives
  • seasonings
Sweet Potato Nachos

Pre-heat the oven to 400 degrees. Slice the sweet potato with a mandolin and place in one layer on a parchment lined baking sheet. Bake for around 15-20 minutes depending on thickness of the slices. Flip the slices once halfway through the cooking time to cook (and brown) evenly on both sides. I watch mine very closely since they can burn fast!

While the potatoes are in the oven I cook the meat on the stovetop. I use about 1/2 tbs of olive oil in a cast iron skillet and season the meat with anything I have on hand (usually garlic powder, onion powder, salt, pepper, and paprika).

Then assemble– potatoes, meat, lettuce, tomatoes, ranch, avocado, salsa and hot sauce. So easy and so delicious, enjoy!! 🙂
